Preparation Method Steps:

  1. Preheat oven to 180°C (160°C fan/gas 4). Grease and line a 2lb loaf tin.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and sugar.
  3. In a separate bowl, whisk together the egg, milk, sunflower oil, and honey.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the cranberries and walnuts.
  6. Pour the batter into the prepared loaf tin and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool in the tin for a few minutes before turning out onto a wire rack to cool completely.
