Preparation Method Steps:

  1. Cube the chicken breast into bite-sized pieces.
  2. In a blender, grind the cashew nuts into a smooth paste. Add a little water if necessary.
  3. Slice the bell peppers and onion into thin strips.
  4. In a hot pan, stir fry the chicken pieces until cooked through and slightly browned. Remove from the pan and set aside.
  5. In the same pan, add the ground cashew paste and cook for a few minutes until it starts to bubble.
  6. Add the bell peppers, onions, and garlic and continue to stir fry for another 5 minutes.
  7. Return the chicken to the pan and add fish sauce, Thai sweet chili sauce, and brown sugar. Mix well and cook for another 5 minutes.
  8. Garnish with fresh basil leaves (if using) and serve hot.
