Preparation Method Steps:

  1. Place the eggs in a single layer in a saucepan. Add cold water to cover the eggs by about 1 inch. Bring the water to a boil over medium-high heat. Once boiling, remove the pan from the heat, cover, and let stand for 12-15 minutes, or until the eggs are hard-boiled.
  2. Drain the hot water and immediately run cold water over the eggs until they are completely cool. Peel the eggs and cut them in half lengthwise.
  3. Remove the yolks and transfer them to a small bowl. Mash the yolks with a fork.
  4. Cut the avocados in half, remove the pits, and scoop out the flesh. Mash the avocado with a fork until smooth.
  5. Add the avocado, sour cream, mayonnaise, red onion, lemon juice, smoked paprika, salt, and black pepper to the mashed yolks. Mix until well combined.
  6. Spoon the avocado filling into the egg white halves. Garnish with cilantro.
