  1. Preheat oven to 400°F (200°C).
  2. Scrub sweet potatoes clean and prick them with a fork.
  3. Bake sweet potatoes for 45-60 minutes, or until tender.
  4. While the sweet potatoes are baking, mash the avocados in a bowl.
  5. Stir in sour cream, red onion, cilantro, honey, lime juice, cumin, salt, and pepper.
  6. Once sweet potatoes are done, let them cool slightly.
  7. Slice each sweet potato in half lengthwise and scoop out the flesh, leaving a thin shell.
