  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the flour, sugar, baking soda, and salt. Mix well.
  3. In another bowl, mash the bananas until smooth. Add the sour cream and oil/butter and mix well.
  4. Add the eggs to the banana mixture and mix until combined.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Fill the muffin cups (silicone or paper-lined) about 3/4 full with the mixture.
