Preparation Method Steps:

  1. Heat the vegetable oil in a large skillet or Dutch oven over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic, ginger, and green chili peppers (if using) and cook for 1 minute more, stirring frequently.
  4. Stir in the spices: turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala. Cook for another minute, or until fragrant.
  5. Add the potato cubes and stir to coat them with the spices.
  6. Add the tomato paste and cook for 2-3 minutes, stirring occasionally.
  7. Pour in enough water to cover the potatoes by about an inch.
  8. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the potatoes are tender.
  9. Add the lemon juice and salt to taste.
  10. Garnish with fresh cilantro or parsley (optional).
