Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. Preheat a large skillet over medium heat. Melt 4 tablespoons of butter and cook the chicken breasts for 5-7 minutes per side, or until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside. Melt the remaining 4 tablespoons of butter in the same skillet. Add the onion and cook until softened. Add the garlic and cook for 1 minute more.
  4. Stir in the flour and cook for 1 minute. Gradually whisk in the milk and chicken broth. Bring to a boil and reduce heat to medium-low. Simmer for 10 minutes, or until thickened.
  5. Stir in the mustard, nutmeg, salt, and pepper. Return the chicken to the skillet and simmer for 5 minutes more.
  6. Meanwhile, wash and drain the spinach. Squeeze out any excess water.
  7. Stir the spinach into the casserole and heat through.
