  1. In a large bowl, combine the flour and salt. Gradually add the warm water while stirring with chopsticks or a wooden spoon until a dough forms.
  2. Knead the dough for 5-7 minutes on a lightly floured surface until it becomes smooth and elastic.
  3. Divide the dough into 8 equal portions and shape them into balls. Cover with a damp cloth and let rest for at least 30 minutes.
  4. To pull the noodles, hold a dough ball in one hand and stretch it out with your other hand. Start by holding the dough vertically and pulling it down. As you pull, rotate the dough and continue stretching until it becomes thin and long. Repeat with the remaining dough balls.
  5. To cook the noodles, bring a large pot of salted water to a rolling boil. Carefully add the noodles to the boiling water and cook for 2-3 minutes, or until they float to the top.
  6. Drain the noodles and rinse with cold water.
  7. In a small bowl, whisk together the dark soy sauce, light soy sauce, hoisin sauce, honey, sesame oil, garlic, ginger, and scallions.
  8. In a large skillet, heat the vegetable oil over medium heat. Add the noodles and stir-fry for 3-4 minutes, or until heated through.
