  1. Preheat oven to 375°F (190°C). Butter a 9-inch pie plate.
  2. Combine apples, sugar, cinnamon, and lemon juice in a large bowl.
  3. Arrange 4 bread slices overlapping in the bottom of the pie plate. Brush with melted butter.
  4. Spread half of the apple mixture over the bread.
  5. Place another 4 bread slices on top and brush with melted butter.
  6. Spread the remaining apple mixture on top.
  7. In a separate bowl, whip heavy cream until stiff peaks form. Stir in vanilla extract.
  8. Spread whipped cream over the apples.
