  1. Preheat oven to 400°F (200°C).
  2. Cut eggplants in half lengthwise and scoop out the flesh, leaving about 1/2 inch of flesh around the edges.
  3. Brush eggplant skin with olive oil and season with salt and pepper.
  4. Place eggplants on a baking sheet and roast for 20 minutes, or until tender and slightly browned.
  5. Meanwhile, chop onion, bell pepper, and garlic.
  6. Sauté onion, bell pepper, and garlic in olive oil until softened.
  7. Add eggplant flesh to the sautéed vegetables and cook for 5 minutes more.
  8. In a large bowl, combine eggplant mixture, bread crumbs, Parmesan cheese, egg, salt, and pepper. Mix well.
  9. Form mixture into 8 patties.
