Preparation Method Steps:

  1. Preheat oven to 190°C/375°F/gas 5.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Stir in the honey, baking soda, and mixed spice.
  5. Gradually add the flour, mixing until combined.
  6. Roll out the dough on a lightly floured surface to a thickness of about 5mm.
  7. Use a cookie cutter to cut out shapes from the dough.
  8. Place the snaps on the prepared baking sheet and bake for 10-12 minutes, or until golden brown.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
