Preparation Method Steps:

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet and pan-fry chicken breasts until golden brown on both sides. Transfer to a baking dish and bake for 15 minutes, or until cooked through.
  3. While the chicken cooks, make the guacamole. Combine avocado, lime juice, cilantro, and salt and pepper to taste.
  4. When the chicken is cooked, shred or dice it.
  5. Spread guacamole on one side of each slice of bread. Top with shredded chicken, onion, and jalapenos (optional).
