Preparation Method Steps:

  1. Set the Instant Pot to high pressure and add olive oil.
  2. Season the chicken with salt and place it in the Instant Pot, skin-side down.
  3. Saute the chicken for about 5 minutes until the skin is golden brown. Remove the chicken and set it aside.
  4. Add the chopped celery, carrots, green onions, and garlic to the pot and saute for 2-3 minutes.
  5. Pour in the chicken broth or water and add the poultry seasoning, salt, and pepper. Mix well.
  6. Nestle the chicken back into the pot, ensuring it is submerged in the liquid.
  7. Set the Instant Pot to low pressure and cook for 15 minutes. Then, let the pressure release naturally for 10 minutes.
  8. While the chicken is cooking, prepare the dumplings according to package instructions.
  9. Once the pressure has released, carefully remove the chicken and place it on a plate. Cover with aluminum foil to keep warm.
