Preparation Method Steps:

  1. Set the Instant Pot to sauté mode and preheat with some sesame oil.
  2. Season short ribs with salt and pepper. Add to the Instant Pot and brown on all sides.
  3. Remove excess fat and return the pot to sauté mode. Add the garlic, ginger, and green onions and cook for a minute.
  4. Add the chili paste, soy sauce, mirin, and brown sugar. Mix well and cook for another minute.
  5. Pour in the water or chicken broth. Secure the Instant Pot lid and set to manual/high pressure for 20 minutes.
  6. After the cooking time is up, let the pressure release naturally for 10 minutes then manually release the rest.
  7. Open the pot and adjust seasoning if necessary. Serve with your choice of side dishes.
