Preparation Method Steps:

  1. Season the flank steak with salt and pepper.
  2. Heat the vegetable oil in the Instant Pot using the "Sauté" function.
  3. Brown the steak on both sides, about 2-3 minutes per side.
  4. Remove the steak from the pot and set aside.
  5. Add the onion, green bell pepper, and red bell pepper to the pot and sauté for 5 minutes, or until softened.
  6. Stir in the diced tomatoes, green chiles, chili powder, cumin, oregano, salt, and pepper.
  7. Add the beef broth and return the steak to the pot.
  8. Secure the lid on the Instant Pot and set the valve to "Sealing."
  9. Cook on high pressure for 90 minutes.
  10. Once the cooking time is complete, let the pressure release naturally for 15 minutes before releasing the remaining pressure manually.
  11. Transfer the steak to a cutting board and shred it using two forks.

  13. If desired, mix the cornstarch and water in a small bowl and add it to the sauce to thicken. Stir until thickened.
