  1. Brown the ground beef in a large skillet over medium heat. Drain off any excess fat.
  2. Add the onion and garlic to the skillet and cook until softened.
  3. Stir in the crushed tomatoes, tomato sauce, chili powder, cumin, oregano, salt, and pepper. Bring to a simmer and cook for 20 minutes, or until the sauce has thickened.
  4. Preheat oven to 350 degrees F (175 degrees C).
  5. Spread 1/4 cup of the beef mixture down the center of each tortilla. Sprinkle with cheddar cheese.
