  1. Preheat oven to 375°F (190°C).
  2. Slice the eggplant lengthwise into 1/2-inch thick slices. Brush with olive oil and season with salt and pepper.
  3. Grill or pan-fry the eggplant slices until softened, about 5 minutes per side.
  4. Meanwhile, brown the ground beef in a large skillet over medium heat. Drain off any excess fat.
  5. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  6. Stir in the tomato sauce, water, oregano, salt, and pepper. Simmer for 15 minutes, or until the sauce has thickened.
