Preparation Method Steps:

  1. Preheat oven to 350°F (175°C).
  2. Cook bacon in a large skillet over medium heat until crisp. Remove bacon to a paper towel-lined plate to drain.
  3. Drain all but 2 tablespoons of bacon fat from the skillet. Add onion and cook over medium heat until softened, about 5 minutes. Add spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
  4. In a large bowl, whisk together eggs, milk, salt, and pepper.
  5. Layer half of the egg mixture in a greased 9x13 inch baking dish. Top with half of the bacon, spinach mixture, mozzarella cheese, and cheddar cheese. Repeat layers.
