  1. Combine the brown sugar, paprika, chili powder, cumin, garlic powder, onion powder, salt, and pepper in a small bowl. Rub the spice mixture all over the pork shoulder.
  2. Place the pork shoulder in a large Dutch oven or roasting pan. Pour the apple cider vinegar over the pork. Cover and refrigerate for at least 4 hours, or overnight.
