Preparation Method Steps:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat olive oil over medium heat in a large Dutch oven or ovenproof pot.
  3. Add chicken pieces and brown on all sides.
  4. Remove chicken from pot and set aside.
  5. Add onion, carrots, and celery to the pot and cook until softened about 5 minutes.
  6. Stir in thyme, oregano, salt, and pepper.
  7. Add chicken broth and bring to a boil.
  8. Reduce heat to low and simmer for 15 minutes to develop flavor.
  9. Return chicken to the broth and bring back to a simmer.
  10. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  11. Gradually add milk to flour mixture, whisking until smooth.
  12. Drop spoonfuls of dumpling batter onto the simmering broth.
  13. Cover pot and reduce heat to very low.
  14. Simmer for 20 minutes or until dumplings are cooked through.
  15. Sprinkle with parsley and serve.
