  2. Season the duck breast with salt and pepper. Place on a baking sheet and roast for 30-45 minutes, or until the internal temperature reaches 135 degrees F (57 degrees C) for medium-rare.
  3. Remove the duck breast from the oven and let rest for 15 minutes.
