  1. Preheat oven to 400°F (200°C).
  2. Brush halibut fillets with olive oil and season with salt and pepper.
  3. Separate phyllo dough sheets and brush with melted butter.
  4. Place a halibut fillet at one end of each dough sheet.
  5. Fold dough over halibut, starting with one side and then the other, and continuing around to the end.
