Preparation Method Steps:

  1. Wash and dry the apples. Remove the stems but do not remove the cores. Insert a lollipop stick or bamboo skewer into the top of each apple.
  2. Line a baking sheet with parchment paper. Set aside.
  3. In a medium saucepan over medium heat, combine the sugar and corn syrup. Cook, stirring constantly, until the sugar dissolves and the mixture turns a deep amber color (about 5 minutes).
  4. Carefully pour in the heavy cream (the mixture will bubble up). Remove the saucepan from heat and stir in the butter and vanilla extract.
  5. Dip each apple into the caramel sauce, rotating to coat evenly. Allow any excess caramel to drip off.
  6. Place the apples on the prepared baking sheet and refrigerate for at least 1 hour, or until the caramel has set.
