Preparation Method Steps:

  1. Preheat oven to 400°F (200°C).
  2. Slice potatoes thinly and toss with olive oil, salt, and pepper. Place in a single layer on a baking sheet and roast for 30-45 minutes, or until golden brown and tender.
  3. While potatoes are roasting, heat a large skillet over medium heat. Add onion and garlic and sauté until softened.
  4. Add ground beef and Italian sausage to the skillet and brown. Drain off any excess fat.
  5. Stir in crushed tomatoes, tomato paste, oregano, and basil. Simmer for 15 minutes, or until sauce has thickened.
  6. In a large bowl, combine ricotta cheese, Parmesan cheese, mozzarella cheese, salt, and pepper.
  7. To assemble lasagna, spread a layer of potato slices in the bottom of a greased 9x13 inch baking dish.
  8. Top with 1/2 of the meat sauce, then 1/2 of the ricotta cheese mixture.
  9. Repeat layers and bake for 45-60 minutes, or until lasagna is bubbly and hot throughout.
  10. Let stand for 10 minutes before serving.
