Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. Peel and slice potatoes into thin slices using a mandoline or sharp knife.
  3. Sauté onion in butter until softened.
  4. In a large bowl, thaw spinach and squeeze out excess water.
  5. Stir in sautéed onion, cream of mushroom soup, sour cream, and salt and pepper to taste.
  6. Layer half of the potato slices in a greased 9x13 inch baking dish.
  7. Spread the spinach mixture evenly over the potatoes.
  8. Layer the remaining potato slices on top.
  9. In a small bowl, combine breadcrumbs and melted butter.
  10. Sprinkle the breadcrumb topping over the casserole.
  11. Bake for 50 minutes, or until potatoes are tender and the casserole is bubbling.
