  1. Preheat oven to 325°F (165°C).
  2. In a large Dutch oven or skillet, heat olive oil over medium heat.
  3. Brown pork on all sides. Remove from pot and set aside.
  4. Add onions and bell peppers to the pot and cook until softened, about 5 minutes.
