Preparation Method Steps:

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch (23cm) pie plate.
  3. In a food processor or high-speed blender, combine raspberries and lemonade concentrate with 1 cup of water. Puree until smooth.
  4. In a separate bowl, whip heavy cream until stiff peaks form.
  5. In a large bowl, beat cream cheese until smooth. Add raspberry lemonade mixture and vanilla extract. Beat until well combined.
  6. Fold whipped cream into the raspberry mixture. Spread over prepared graham cracker crust.
  7. Cover and refrigerate for at least 4 hours, or overnight.
  8. Before serving, sprinkle with lemon zest.
