Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. Combine ricotta cheese, cottage cheese, Parmesan cheese, basil, parsley, and garlic in a large bowl. Season with salt and pepper to taste.
  3. In a separate bowl, mix together tomato sauce, diced tomatoes, roasted vegetables, kale, onion, and green bell pepper.
  4. Spread 1 cup of the tomato sauce mixture on the bottom of a 9x13-inch baking dish.
  5. Layer 6 lasagna noodles on top of the tomato sauce.
  6. Spread half of the ricotta cheese mixture over the noodles.
  7. Top with half of the remaining tomato sauce mixture.
  8. Repeat layers.
  9. Sprinkle with remaining Parmesan cheese.
  10. Bake in preheated oven for 45-50 minutes, or until bubbly and golden brown.
