  1. Preheat oven to 375°F (190°C).
  2. Remove stems from mushrooms and chop finely.
  3. In a large skillet, cook sausage over medium heat until browned. Add onion, bell pepper, and sun-dried tomatoes (if using) and cook until softened.
  4. In a large bowl, combine sausage mixture, chopped mushroom stems, Parmesan cheese, bread crumbs, parsley, egg, salt, and pepper. Mix well.
  5. Stuff mushroom caps with sausage mixture.
