1 pound (454g) cooked seafood mix (lobster, shrimp, crab) 1 cup (236ml) shredded Monterey Jack cheese 8 corn tortillas 1 cup (236ml) enchilada sauce 1/2 cup (118ml) chopped fresh cilantro 1 tablespoon (15ml) chili powder 1 teaspoon (5ml) ground cumin Salt and pepper to taste

Preparation Method Steps:

  1. Preheat the oven to 375°F (190°C).
  2. Mix the cooked seafood with the shredded cheese, cilantro, chili powder, and cumin. Add salt and pepper to taste.
