Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, melt butter over medium heat. Add celery and onion and cook until softened.
  3. Stir in flour and cook for 1 minute.
  4. Gradually whisk in chicken broth and heavy cream. Bring to a boil, then reduce heat and simmer for 5 minutes, or until thickened.
  5. Stir in shrimp, scallops, peas and carrots, thyme, rosemary, salt, and pepper. Cook for 5-7 minutes, or until seafood is cooked through.
  6. Pour mixture into a 9-inch pie dish.
  7. Roll out pie crust and cut into strips. Arrange strips over pot pie.
  8. Brush strips with beaten egg.
  9. Bake for 30-35 minutes, or until golden brown.
