Preparation Method Steps:

  1. Place chicken thighs in a slow cooker.
  2. In a large bowl, combine onion, carrots, celery, chickpeas, diced tomatoes, chicken broth, cumin, coriander, cayenne pepper, salt, and black pepper. Stir to combine.
  3. Pour vegetable mixture over chicken thighs in slow cooker.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  5. Once chicken is cooked through, remove from slow cooker and shred using two forks.
  6. Add shredded chicken back to slow cooker and stir to combine.
  7. Garnish with fresh cilantro before serving.
