  1. Preheat the oven to 325°F (165°C).
  2. Heat the olive oil in a large Dutch oven or roasting pan over medium heat.
  3. Season the beef short ribs with salt and pepper. Brown the ribs on all sides, about 10 minutes.
  4. Remove the ribs from the pot and set aside.
  5. Add the onion, carrots, celery, and garlic to the pot. Cook until softened, about 5 minutes.
  6. Stir in the red wine, beef broth, Worcestershire sauce, tomato paste, thyme, rosemary, salt, and pepper. Bring to a simmer and cook for 10 minutes.
  7. Return the beef short ribs to the pot and nestle them in the sauce. Cover and braise in the oven until the meat is tender and falling off the bone, about 2 1/2-3 hours.
  8. Remove the ribs from the pot and set aside. Strain the sauce into a saucepan and discard the solids.
  9. Bring the sauce to a boil and reduce by half, about 5 minutes.
  10. Serve the beef short ribs with the sauce poured over them.
