  2. Combine the sugar, milk, heavy cream, vanilla bean and seeds in a medium saucepan. Bring to a boil over medium heat, stirring constantly.
  3. Remove from heat and let cool slightly.
  4. Whisk together the eggs, egg yolks, cinnamon, and nutmeg in a large bowl.
  5. Gradually whisk the hot milk mixture into the egg mixture.
