Preparation Method Steps:

  1. In a large pot or Dutch oven over medium heat, sauté the onion and garlic until softened.
  2. Add the butternut squash, carrots, cumin, coriander, thyme, cayenne pepper, vegetable broth, and salt and black pepper to taste.
  3. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until the vegetables are tender.
  4. Remove from heat and puree the soup with an immersion blender or in a regular blender until smooth.
  5. Return the soup to the pot and stir in the heavy cream. Heat until warmed through.
