  1. Cook the sushi rice: Rinse the sushi rice under cold water until the water runs clear. Cook the rice in a rice cooker or saucepan according to the manufacturer's instructions.
  2. Season the sushi rice: Once the rice is cooked, transfer it to a large bowl. Add the rice vinegar, sugar, and salt and mix well. Let the rice cool to room temperature.
  3. Prepare the yellowtail sushi-grade fish: Cut the yellowtail into thin slices, about 1/4-inch thick.
  4. Prepare the avocado and cucumber: Peel and pit the avocado. Slice the avocado and cucumber into thin, long slices.
  5. Assemble the sushi rolls: Place a sheet of nori (seaweed wrapper) on a bamboo rolling mat. Spread a thin layer of sushi rice over the nori, leaving about 2 inches at the top of the sheet free.
