Preparation Method Steps:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat. Remove the excess fat.
  3. Add the onion and bell pepper to the skillet and cook until softened.
  4. Stir in the taco seasoning and salsa. Bring to a simmer and cook until slightly thickened.
  5. Cook lasagna noodles according to package directions.
  6. In a large bowl, combine the ground beef mixture, ricotta cheese, and 1/2 cup of cheddar cheese and Monterey Jack cheese.
  7. Spread a thin layer of the ground beef mixture into the bottom of a 9x13 inch baking dish.
  8. Top with half of the lasagna noodles.
  9. Spread the remaining ground beef mixture over the noodles.
  10. Top with the remaining lasagna noodles.
  11. In a small bowl, combine the remaining cheddar cheese and Monterey Jack cheese. Sprinkle over the lasagna.
  12. Bake for 30-35 minutes, or until the cheese is melted and bubbly.
  13. Let the lasagna cool for 10 minutes before slicing and serving.
