Preparation Method Steps:

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Add the chopped onion, green bell pepper, and red bell pepper to the skillet and cook until softened.
  4. Stir in the taco seasoning and cook for 1 minute, or until fragrant.
  5. Spread a layer of enchilada sauce in the bottom of a greased 9x13 inch baking dish.
  6. Place a tortilla in the sauce, followed by a scoop of the beef mixture, and a sprinkle of cheddar cheese.
  7. Roll up the tortilla and place it in the baking dish. Repeat with the remaining tortillas.
  8. Pour the remaining enchilada sauce over the enchiladas.
