Preparation Method Steps:

  1. Prepare the turkey by removing the neck and giblets. Rinse the bird and pat dry with paper towels.
  2. In a small bowl, combine the olive oil, lemon juice and zests, rosemary, thyme, and garlic. Season with salt and pepper to create the marinate.
  3. Rub the turkey cavity and skin with the marinate. Let the bird rest for at least 2 hours, preferably in the refrigerator overnight.
