  1. Soak rice noodles in warm water until softened, about 10-15 minutes.
  2. Peel and devein shrimp. Slice chicken into thin strips.
  3. Heat a large skillet or wok over high heat. Add 1 tbsp of oil and cook chicken until browned, about 5-7 minutes. Remove from pan and set aside.
  4. Add another tbsp of oil to the pan and cook shrimp until pink and cooked through, about 2-3 minutes. Remove from pan and set aside.
  5. Whisk together the sauce ingredients in a bowl.
  6. Add rice noodles to the pan and cook until softened, about 2-3 minutes.
  7. Push noodles to one side of the pan and scramble eggs.
  8. Add chicken, shrimp, bean sprouts, and sauce to the pan. Stir to combine.
  9. Cook until heated through, about 2-3 minutes.
  10. Top with peanuts, green onions, and cilantro.
