  2. Vegan Sausage (plant-based): 2 links, about 200g
  3. Peas: 1 cup, about 150g
  4. Carrots: 1 medium, about 100g
  5. Bell Peppers: 1, about 70g
  6. Onion: 1 large, about 150g
  7. Garlic: 3 cloves
  8. Extra Virgin Olive Oil: 3 tablespoons
  9. Dried Thymeleaf: 1 teaspoon
  10. Salt and Pepper: to taste

Preparation Method Steps:

  1. In a large paella pan or deep skillet, heat the olive oil on medium-high heat.
  2. Dice the onion, bell peppers, and carrots into small pieces and add to the pan. Sauté until softened.
  3. Slice the vegan sausage into thin rounds and add to the pan. Cook for a few minutes until heated through.
  4. Add the rice to the pan and stir to coat with the oil and veggies.
  5. Pour in enough water to cover the rice by about 1 inch (adjust according to your rice). Season with salt and pepper.
  6. Bring to a boil, then reduce heat to low and let it simmer, covered, for about 20 minutes or until the rice is almost cooked through.
  7. Add the peas and continue cooking for another 10-15 minutes, or until the rice is completely cooked and the liquids are absorbed.
  8. Remove from heat and let stand for a few minutes before serving.
  9. Fluff with a fork and serve hot.
