Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. Season zucchini slices with salt and pepper and place on a paper towel-lined baking sheet. Let stand for 10 minutes to remove excess moisture.
  3. In a large skillet, brown ground beef and sausage over medium heat. Drain off excess grease.
  4. Add onion, bell pepper, and garlic to the skillet and cook until softened.
  5. Stir in crushed tomatoes, tomato sauce, tomato paste, oregano, basil, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  6. Grease a 9x13 inch baking dish. Arrange half of the zucchini slices in the bottom of the dish. Top with half of the meat sauce.
  7. Sprinkle with half of the Parmesan cheese. Repeat layers.
  8. Top with mozzarella cheese and parsley.
  9. Bake for 30-35 minutes, or until cheese is melted and bubbly.
