Preparation Method Steps:

  1. Cut the zucchini into bite-sized pieces.
  2. Slice the bell pepper and onion into thin strips.
  3. Mince the garlic and ginger.
  4. In a small bowl, whisk together the soy sauce, hoisin sauce, oyster sauce, and sesame oil.
  5. In a large skillet or wok, heat the vegetable oil over medium heat.
  6. Add the zucchini, bell pepper, and onion to the pan. Cook, stirring occasionally, until the vegetables are tender but still slightly crisp.
  7. Add the garlic and ginger and sauté for 1 minute.
  8. Pour in the sauce mixture and bring to a boil.
  9. In a small bowl, whisk together the cornstarch and 2 tablespoons of water. Add this slurry to the sauce and stir until the sauce thickens.
