Preparation Method Steps:

  1. Rinse the rice thoroughly until the water runs clear.
  2. In a medium saucepan, combine the lentils, water, and a pinch of salt. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.
  3. While the lentils are cooking, chop the onion, carrots, and celery into small pieces. Mince the garlic.
  4. In a large skillet, melt the butter over medium heat. Add the onion and cook until softened, about 5 minutes.
  5. Add the carrots, celery, and garlic to the skillet and cook for an additional 5 minutes, or until the vegetables begin to soften.
  6. Stir in the cranberries, pistachios, saffron, and lentils. Season with salt and pepper to taste.
  7. In a large pot, add the rice and 4 cups of water. Bring to a boil, then reduce heat and simmer for 18-20 minutes, or until the rice is tender and has absorbed all the water.
  8. Fluff the rice with a fork and spread it on a large serving platter.
  9. Top the rice with the lentil mixture and serve immediately.
