  1. Preheat oven to 350°F (175°C). Line a muffin tin with 12 cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Alternately add dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
  5. Fill cupcake liners with batter to about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Meanwhile, make the applesauce filling. In a small saucepan, simmer applesauce until thickened. Remove from heat and let cool slightly.
