Preparation Method Steps:

  1. Preheat oven to 350°F (175°C). Grease and flour 8 mini bundt cake molds or muffin tins.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  4. Alternately add dry ingredients and buttermilk to the wet ingredients, beginning and ending with the dry ingredients. Stir in apples and walnuts, if desired.
  5. Fill prepared molds 2/3 full.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow cakes to cool in their molds for 10 minutes before inverting onto a wire rack to cool completely.
