Preparation Method Steps:

  1. Preheat oven to 400°F (200°C).
  2. Place potatoes in a large pot of cold water. Bring to a boil and cook until tender, about 15 minutes. Drain and mash potatoes.
  3. In a large bowl, combine mashed potatoes, flour, egg, Parmesan cheese, salt, and pepper. Stir until dough forms.
  4. On a lightly floured surface, divide dough into 8 equal portions. Roll each portion into a 1-inch thick rope. Cut ropes into 1-inch pieces.
  5. Heat olive oil in a large skillet over medium heat. Add onion, green bell pepper, and red bell pepper. Cook until softened, about 5 minutes.
  6. Stir in crushed tomatoes, tomato sauce, green chiles, black beans, and corn. Bring to a simmer and cook for 15 minutes.
  7. Spread half of the tomato mixture in a 9x13-inch baking dish. Top with gnocchi. Pour remaining tomato mixture over gnocchi.
  8. Bake for 25 minutes, or until gnocchi is cooked through. Sprinkle with cheddar cheese and cilantro before serving.
