  1. Preheat oven to 325°F (160°C).
  2. Season beef short ribs with salt and pepper.
  3. Heat olive oil in a large Dutch oven or roasting pan over medium heat. Brown short ribs on all sides, about 5 minutes per side.
  4. Remove short ribs and set aside. Add onion, carrots, and celery to the pan and cook until softened, about 5 minutes.
  5. Stir in garlic and cook for 1 minute more.
