  1. Preheat oven to 325°F (165°C).
  2. Season lamb shanks with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add lamb shanks and brown on all sides.
  3. Transfer browned lamb shanks to a Dutch oven or roasting pan. Add red wine, beef stock, chicken stock, diced vegetables, garlic, thyme, rosemary, salt, and black pepper.
  4. Cover and braise in the preheated oven for 3 hours, or until lamb shanks are tender.
  5. Remove lamb shanks from the liquid and place on a serving platter. Strain the braising liquid into a saucepan and reduce over medium heat until thickened, about 15 minutes.
  6. Pour the reduced braising liquid over the lamb shanks. Serve immediately with mashed potatoes or roasted vegetables.
