Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. Spread a thin layer of salsa in the bottom of a 9x13 inch baking dish.
  3. Place a tortilla in the baking dish and spread a portion of the breakfast sausage, cheddar cheese, black beans, corn, bell peppers, onions, and tomatoes down the center.
  4. Roll up the tortilla and place it seam-side down in the baking dish.
  5. Repeat steps 3-4 with the remaining ingredients.
  6. Pour the remaining salsa over the enchiladas and sprinkle with Monterey Jack cheese.
  7. Cover with aluminum foil and bake for 20-25 minutes, or until the cheese is melted and the enchiladas are hot and bubbly.
  8. Let cool for a few minutes before slicing and serving.
